RECIPES

1. Meetha Paan with Kattha (Traditional Paan)

Ingredients:

• Betel leaves (fresh paan leaves)

• 1/2 tsp kattha paste

• 1/2 tsp slaked lime (choona) — optional

• 1 tbsp gulkand (rose preserve)

• Fennel seeds, grated coconut, tutti-frutti, cardamom, cloves

‍ Instructions:

1. Wash and dry the betel leaf.

2. Spread a thin layer of kattha and lime.

3. Add gulkand, fennel, coconut, and other fillings.

4. Fold and serve as a sweet paan.

2. Kattha Chutney (Rustic Style)

Traditional in rural India, especially Bihar and UP, as an accompaniment to sattu or paratha.

Ingredients:

• 1/4 tsp kattha powder or paste

• 1/2 cup tamarind pulp

• 1 tbsp jaggery

• 1 green chili (chopped)

• Salt to taste

• Optional: roasted cumin powder

1. Mix kattha with tamarind, jaggery, and spices.

2. Stir until smooth.

3. Serve with rice, roti, or litti.

Ingredients:

• 1/4 tsp kattha powder

• 1 pinch turmeric
