RECIPES

1. Aam Ka Achaar (Mango Pickle with Kalonji)

Ingredients:

• Raw mangoes (cut)

• Mustard oil

• Kalonji, fennel seeds, mustard seeds, fenugreek, red chili, turmeric, salt

Instructions:

1. Mix mango with all spices.

2. Heat mustard oil, cool slightly, pour over mangoes.

3. Mix well and sun-dry in a jar.
   ️ Kalonji gives it that classic North Indian achaar vibe!

2. Naan with Kalonji (Tandoori-style)

Ingredients:

• Maida (all-purpose flour)

• Yogurt, baking powder, salt

• Kalonji for topping

• Butter/ghee

Instructions:

1. Prepare soft naan dough, rest 1–2 hrs.

2. Roll, sprinkle kalonji, and cook on tawa or tandoor.

3. Brush with ghee. Serve hot with curry.

3. Bengali-style Luchi with Kalonji

Ingredients:

• Maida

• 1 tsp kalonji

• Salt, oil

Instructions:

1. Mix dough with kalonji.

2. Roll into small discs and deep-fry like puris.

3. Fluffy and subtly spiced — serve with aloo dum or cholar dal.
