    1. Kaju Pulao (Cashew Rice)

    Ingredients:

    • 1/2 cup Kaju 320 (roasted in ghee)

    • 1 cup basmati rice (soaked)

    • Whole spices (cloves, bay leaf, cardamom)

    • 1 onion (sliced thin)

    • Salt, ghee or oil

    Instructions:

    1. Roast kaju in ghee until golden. Set aside.

    2. Sauté whole spices and onions until golden.

    3. Add rice, salt, water (2:1), and cook.

    4. Mix in roasted cashews before serving.


    2. Paneer Kaju Masala

    Ingredients:

    • 1/2 cup soaked Kaju 320 (blend to a smooth paste)

    • Paneer cubes

    • Onion-tomato masala base

    • Spices: cumin, garam masala, chili, turmeric

    • Fresh cream (optional)

    Instructions:

    1. Sauté masala and spices until oil separates.

    2. Add cashew paste, cook for 4–5 mins.

    3. Add paneer cubes and a splash of water.

    4. Simmer and garnish with cream/coriander.


    3. Kaju Khoya Barfi

    Ingredients:

    • 1 cup Kaju 320 (ground into powder)

    • 1/2 cup khoya (mawa)

    • 1/2 cup sugar or date syrup

    • Cardamom powder, ghee

    Instructions:

    1. Mix khoya, kaju powder, and sugar in a pan.

    2. Stir till it thickens and leaves sides of the pan.

    3. Set in a greased tray, cool, and cut into squares.
